Warm, velvety, and gently spiced, this Spiced Kumara Soup is the ultimate winter comfort dish. Full of natural sweetness and vibrant colour, kumara (sweet potato) blends beautifully with warming spices like cumin, turmeric, and a hint of ginger. It’s a satisfying, nourishing soup that feels like a hug in a bowl—perfect for chilly nights or cosy lunches.
Ingredients:

1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tsp ground cumin
1 tsp ground coriander
½ tsp turmeric
600g kumara, peeled and chopped
1 carrot, chopped
4 cups vegetable or chicken stock
Salt and pepper, to taste
½ cup coconut cream or milk (optional, for creaminess)
Fresh coriander or parsley to garnish
Method:
In a large pot, heat olive oil over medium heat. Add onion and sauté for 3–4 minutes until soft.
Stir in garlic, ginger, and spices. Cook for 1–2 minutes until fragrant.
Add kumara and carrot, toss to coat with spices.
Pour in stock, bring to a boil, then reduce heat and simmer for 20–25 minutes or until vegetables are soft.
Use a stick blender or transfer to a blender and puree until smooth.
Stir in coconut cream if using, then season with salt and pepper.
Serve hot, garnished with herbs and a swirl of extra coconut cream if desired.
Optional Extras:
Top with crispy chickpeas or pumpkin seeds for crunch
Add a spoonful of yoghurt or sour cream for tang
Stir in a little chilli for heat
Serve with warm naan or crusty bread for dipping
Pro Tips:
Roast the kumara and carrot first for extra depth of flavour.
For a protein boost, add a drained can of lentils before blending.
Freeze leftovers in portions—great for grab-and-go lunches.
