Caramelised Onion Relish

Rich, slow-cooked and full of depth, this Caramelised Onion Relish is a simple way to turn everyday meals, lunches and snacks into something special. Made with just a few pantry staples and onions, it’s the perfect condiment for burgers, platters, sandwiches, or cheese boards.
Ingredients:

4 large brown onions, thinly sliced
2 tbsp olive oil or butter
⅓ cup brown sugar
½ cup balsamic vinegar
Salt to taste
Method:
Heat oil or butter in a large pan over medium-low heat.
Add onions and a pinch of salt. Cook gently for 15–20 minutes until soft and golden.
Stir in brown sugar and cook for 5 minutes until dissolved and sticky.
Pour in balsamic vinegar and optional red wine vinegar.
Simmer on low heat, stirring occasionally, for another 15–20 minutes or until thick and jammy.
Season to taste. Let cool, then store in sterilised jars in the fridge for up to 3 weeks.

Use a mix of brown and red onions for complexity and colour.
The longer you cook it, the richer and thicker it becomes — don’t rush!
