Fresh, light, and full of flavour, cucumber & avocado rolls are the perfect springtime snack or appetiser. With crisp cucumber wrapped around creamy avocado, they’re a simple no-cook option that looks as good as it tastes. Quick to prepare, naturally gluten-free, and endlessly adaptable, these little bites are ideal for lunchboxes, party platters, or a healthy afternoon pick-me-up.
Ingredients:

1 large cucumber
1 ripe avocado
Juice of ½ lemon
Salt & pepper, to taste
Optional: cream cheese or hummus spread, sesame seeds
Method:
Slice cucumber lengthwise into thin ribbons using a peeler or mandoline.
Mash avocado with lemon juice, salt, and pepper. Spread a thin layer of avocado (and cream cheese or hummus if using) over each cucumber strip.
Roll up tightly, secure with a toothpick if needed, and sprinkle with sesame seeds.
Pro Tips:
Pat cucumber ribbons dry with a paper towel before rolling — this helps them stay firm and not slip apart.
Use slightly underripe avocado for firmer texture in the filling.
