Celebrate the flavours of the season with this easy, budget-friendly roast veggie bake. Using hearty staples like potatoes, kumara, and carrots, it’s perfect for cosy dinners, meal prepping, or as a colourful side for any meal. Fresh, fuss-free, and full of goodness!
Ingredients:

2 large potatoes, diced
1 kumara (sweet potato), diced
2 carrots, sliced
1 parsnip, sliced
2 tbsp olive oil
1 tsp dried mixed herbs
Salt and pepper to taste
Method:
Preheat oven to 200°C.
Toss all veggies in olive oil, herbs, salt, and pepper.
Spread on a baking tray in a single layer.
Roast for 35–40 minutes, turning halfway, until golden and tender.
Serve hot, or cool and toss into a salad the next day.
Pro Tips:
Cut veggies evenly so they roast at the same speed and you get that perfect golden finish.
Don't overcrowd the tray – giving veggies space allows them to crisp up instead of steaming.
Add extra flavour with a sprinkle of paprika, cumin, or fresh rosemary before roasting.
