Herb Butter Sweetcorn Ears with Feta

Elevate your sweetcorn game with this delicious herb butter recipe, perfect for BBQs or as a flavourful side dish. This creamy, herby corn dish is sure to be a hit at your next meal.



Ingredients:

  • 2 fresh sweetcorn ears

  • 2 tbsp unsalted butter, softened

  • 1 tbsp mixed herbs (e.g., basil, parsley, coriander), finely chopped

  • 1 garlic clove, crushed (or 1 tsp jarred crushed garlic)

  • Salt and pepper to taste

  • Optional: 2 tbsp feta


Method:

  1. Prepare the Sweetcorn: Remove the husks from the sweetcorn and ensure they are clean. Set aside.

  2. Make the Herb Butter: In a small bowl, mix the softened butter with crushed garlic, chopped herbs, and a pinch of salt and pepper.

  3. Butter the Sweetcorn: Rub the herb butter generously all over the sweetcorn pieces, ensuring even coverage.

  4. Cook the Sweetcorn:

    • Grill Method: Place the buttered sweetcorn on a preheated grill over medium heat. Cook for 8-10 minutes, turning occasionally, until golden and slightly charred.

    • Oven Method: Wrap the buttered sweetcorn in foil and bake at 200°C (390°F) for 15-20 minutes, then unwrap and broil for a charred finish.

  5. Serve: Sprinkle crumbled goat’s cheese over the sweetcorn just before serving for a creamy and tangy finish. Add an extra pinch of sea salt and pepper if desired.
